Employees dressed in white lab coats and all manner of glass beakers welcome you to Portola Coffee Lab, a "mad scientist" style coffee house in Costa Mesa that's garnering a huge loyal following. When you arrive, you first choose your coffee origin, followed by a brew method, and then Portola's baristas will work their magic. The most popular, however, is their siphon — a vacuum pot designed in Germany during the 1850s. Those not so keen on coffee can take their pick from a nice blend of teas and herbal tonics, ranging from a killer iced Crimson Berry Fruit Tisane, to a Mango Basil or Rose Lemonade.
